assalam o alaikm viewers today i have another recipe from soup series this is vegetable soup this a vegetarian version as i do not use chicken or any meat broth in it tastes very yummy and delicious try it with croutons,fried bread or you can even serve it with rice noodles as well so lets note down the ingredients we need first for this soup use vegetables of your choice,more or less its completely up to you i use 1 large potato cut into small cubes


1 medium carrot chopped 4 button mushrooms chopped 4 ,5 baby corns chopped 1 cup cabbage chopped red and yellow bell peppers almost 1/2 1/2 cup with 2 stalks of spring onions chopped so choice is all yours ,use what you want to use in this soup for spices and sauces we need 1 liter water


as it is a vegetarian version that,s why i m using water in it but if you are a non vegetarian use chicken stock instead 1/2 cup corn flour or corn starch for thickening 3 tbsp vinegar 3 tbsp soy sauce 2 tsp or tbsp butter for sauteing veggies as i use water in it so i thought to add butter for extra flavoring ajinomoto 1 tsp full,black pepper powder 1 tsp 1 tsp full sesame seed oil


it gives a nice flavor to it salt to taste but i put 1 tsp leveled in this bowl but i adjust it in the end honey,sugar or brown sugar any one 1 tbsp sugar but honey is less sweet then sugar so i use 2 tbsp 1-1/2 cloves of garlic these are big so make almost 1 tsp any hot sauce 1 tbsp full and for more spice i chop 1 red thai chili it is very hot so i remove all the seeds


you can use green thin chili instead of it first put butter in a pan and let it melt mean while i am adding mushrooms and saute for few minuts when they release their water dry it out completely then add another vegetable other wise the raw flavor of mushroom destroy the soup flame is on low so you can see in 5 minutes water from the mushrooms is gone now i am adding potatoes


i will add more butter if i have to and i am thinking of it right now :) add 1 tsp more add carrots with potatoes now mix it and saute another 2 ,3 mins after 2 mins add baby corns with cabbage bell peppers will be added in the end after adding water in it toss or mix it just a minute then add garlic in it( i forgot to add in first ) its not an issue


veggies are done now add all spices and sauces in it i am adding ajino moto (chineese salt ) and black pepper in it i am about to share one thing, i am not sure that vegetarians are actually eating ajino moto or not if yes go a head but if not accept my apologies plzz both are 1 tsp each add hot sauce (any) soy sauce vinegar sesame seeds oil


salt 1/2 tsp chili and honey add all things at same time turn the flame to high and give it a mix and then add water 3 glass give it a boil and cover the lid and cook 8 to 10 minutes (not 15) after 5 minutes add bell peppers add green onions as well


flame is on high mix it how color full it looks check salt and pepperat this point its perfect for me but you also check and feel free to add any thing you want more i mix the corn flour in 1/2 cup water add it while boiling and stir it constantely


make it thick or thin as you like,not an issue this is the perfect consistency for me so now give it a boil and serve immedietely so my yummy mix vegetable soup is ready now it is very tasty as delicious as it looks try it you will definitely like it i do some variations first time like saute veggies in butter and use of sesame seeds oil
